Easy one pot dhal

Fun fact: I used to hate curry (referring to a dish of vegetables/fish/meat cooked in a coconut and spice sauce). I found the taste blend and uneven. It wasn’t creamy and never as good as it looked. Curry was a forever disappointment. But I then proceed to experiment myself. Add spices (lots of them), use different veggies, different times of cooking. And I fell in love with the dish. Now my mouth water when I smell curry. Dhal’s probably my favorite Indian dish, and here’s my super easy version of it.



Now I forgot to add spinach because I’m an idiot, but I urge to add either frozen spinach at the beginning, or fresh at the end of the cooking. Enjoy!

Easy one pot dhal

  • 150 gr Three lentil mix Or red lentil
  • Handful Chopped sun dried tomatoes
  • 1 tbsp Tomato paste
  • 5 tsp Curry powder
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Cumin powder
  • A pinch Espelette pepper
  • To taste Salt and pepper
  • 400 ml Coconut milk
  • 300 ml Vegetable broth


  1. Add everything to a pan, stir well to combine.

  2. Bring to a boil, cover, reduce to a simmer and cook for 30 or 40 minutes, stirring from time to time.
