Quinoa and red pepper sauce

Happy accident. That’s what I’d like to call this meal prep. Wanted to make ratatouille, but zucchinis were expensive and no eggplant in sight. Therefore, I bring to you : the weird yet surprisingly good red pepper sauce. I’m not mad at it.

Basically, it’s red pepper, onion, garlic, tomato and black olives. It comes together in twenty minutes, and goes perfectly with quinoa.

Serves: 2
  • 1 red pepper
  • 1 onion
  • 2 garlic glove
  • 200g of tomato puree
  • 12 black olives
  • 1 tsp of sugar
  • Red chili flakes, to taste
  • 3 tsp of Italian spices
  • Salt, to taste
  • Olive oil
  • Margarine (optional)
  1. Peel and cut the pepper in bit size pieces.
  2. Heat up some olive oil in a pan, and add the pepper.
  3. Reduce the fire to medium high, cover and cook for 5 minutes, stirring from time to time, or until the pepper have softened.
  4. Peel and cut the onion, add it to the pan and salt. Cook for ten minutes or until everything is cooked at your liking.
  5. Put heat on high and add the chopped garlic and stir for a minute or so.
  6. Add the olives, tomato, sugar, chili flakes, Italian spices, cover and simmer for 5 minutes.
  7. Taste and add salt if needed.
  8. You can finish the sauce by steering some margarine in it. It's optional but helps the sauce get that round taste.
