Winter couscous salad

2°C outside doesn’t mean you have to stop making cold meals for your work lunch ! Winter is full of awesome fruit and vegetable (sorry tomato, you’re not invited to the party). Here’s how to make a quick and flavorful couscous salad.

I decided to go for couscous since it’s cheap and easy to make, and I’m cheap and lazy. Then, I was kind of obligated to add apple, because is it a real winter dish if you don’t put an apple ? Crispy baked chickpeas for the proteins. Add to that red onions, cashew and dried raisin, you just made yourself a salad !

This quick and easy couscous salad is perfect for winter meal prep.

Serves: 3
  • 180g of uncooked couscous
  • 265g of canned chickpeas
  • 1 apple
  • 1 red onion
  • A handful of cashew
  • A handful of dried raisin
  • The juice of a lemon
  • The juice of half an orange
  • 2 tbsp of olive oil
  • Salt to taste
  1. Drain and rinse the chickpeas.
  2. Pat them dry, spread them on a backing sheet with some olive oil and salt, and cook them for 45 minutes at 180°C.
  3. Cook the couscous according to the package instruction.
  4. Chop finely the red onion and apple.
  5. Add them to the cooked couscous along with the cashews and raisins.
  6. Add the chickpeas once cooked.
  7. Add the lemon, orange, olive oil and salt to the salad.
  8. Stir well.
  9. Add some parsley for garnish, and enjoy !
