Easy one pot dhal

Fun fact: I used to hate curry (referring to a dish of vegetables/fish/meat cooked in a coconut and spice sauce). I found the taste blend and uneven. It wasn’t creamy and never as good as it looked. Curry was a forever disappointment. But I then proceed to experiment myself. Add spices (lots of them), use different veggies, different times of cooking. And I fell in love with the dish. Now my mouth water when I smell curry. Dhal’s probably my favorite Indian dish, and here’s my super easy version of it.
